Rhubarb Salad
- 3-4 young rhubarb stalks
- 1-2 cucumbers
- 2 tbsp coarse salt
- 1 bunch of rocket leaves
- 3 tbsp lemon juice
- 4 tbsp extra virgin olive oil
- 1 handful of chopped mint leaves
- salt and pepper
- 2 grams miracle berry
Serves 4
Wash rhubarb stalks and strip away any tough outer membrane. Peel one or two cucumbers. Slice the vegetables finely and toss in a bowl with 2 tablespoons coarse salt. Let stand for 10 minutes, rinse, drain and pat dry.
In a salad bowl ,place a bunch of washed and chopped rocket leaves with the cucumber and rhubarb. Dress with 3 tablespoons lemon juice and 4 tablespoons extra virgin olive oil. Season with salt and pepper to taste and garnish with a good handful of chopped mint leaves.Divide 4 grams amoungst 4 people and allow to disolve on the tongue, wait for ten minutes and tuck in!
- How does it work?
The taste changing effects of the Miracle berry or Miracle fruit are attributed to a protein within the flesh of the fruit, called Miraculin. When the fruit is consumed, miraculin binds to your taste buds causing acidic and sour foods to taste incredibly sweet. This effect will last between 1.5 to 2 hours.
- How do I use miracle berry?
Around 0.5g freeze dried miracle berry or 1 tablet placed on the tongue has the desired effect.. Swirl it round your mouth and it will dissolve shortly. Notice a subtle fruity sherbert taste. Wait about ten minutes and begin your taste experience.
- What foods should I try?
The effects of the miracle berry are most evident with foods that contain acids, such as citrus fruits and vinegar. Fresh vegetables take on a pleasant richness. A firm favourite is fresh lemon squeezed into some chilled mineral water - Rich in vitamin C and virtually sugar free.
- Is it safe?
The miracle berry has a long history of use in it's native Ghana where it is considered perfectly safe. With the worldwide use of the miracle berry growing, we have heard no report of any ill effects or allergic reactions.
